Healthy Spinach Lasagna Rolls Recipe — A Modern Mrs.
As if I needed to say it, we clearly aren't following the Paleo diet right now. However, that doesn't mean we aren't still trying to eat as healthfully as possible. As such, how does one make lasagna in the healthiest way? By using whole wheat noodles and packing those suckers full of spinach, of course!

I always thought making homemade lasagna would be a task, complete with lots of prep work and a mess to clean up afterwards. I'm excited to tell you this isn't true! Especially when you make lasagna in the form of rolls rather than the traditional layers format. If you're trying to cut back on carbs, you'll also be excited to know there aren't any leftovers with this recipe! It uses half of a box of lasagna noodles, so if you have more than four people to feed, or you have a very hungry four people, I would double the recipe and use the whole box.

Healthy Spinach Lasagna Rolls Recipe

{Adapted from The Girl Who Ate Everything, who adapted it from Skinny Taste.}

  • 9 Whole Wheat Lasagna Noodles, cooked and drained
  • 10 oz. Frozen Chopped Spinach, thawed and completely drained
  • 15 oz. Ricotta Cheese
  • 1/2 cup Parmesan Cheese
  • 1 Egg
  • 1/2 tsp. Italian Seasoning
  • 1/4 tsp. Garlic Powder
  • Salt and Pepper
  • 9 tbs. Shredded Mozzarella Cheese
  • 32 oz. Tomato Sauce
  1. Preheat oven to 350 degrees. Pour 1 cup of the tomato sauce on the bottom of a 13x9 baking dish.
  2. In a medium bowl, combine spinach, ricotta, Parmesan cheese, egg, italian seasoning, garlic powder, salt, and pepper.
  3. Place a sheet of wax paper on the counter and lay out the lasagna noodles. Gently pat them dry with a paper towel.
  4. Take 1/3 cup of the ricotta mixture and spread it evenly along each noodle. Roll carefully and place seam side down in the baking dish.
  5. Ladle sauce over the rolls and top each one with 1 tbs. of the mozzarella cheese.
  6. Cover the baking dish tightly with aluminum foil and bake for 40 minutes, or until the cheese is melted.
  7. Devour.
