Bruschetta Pesto Chicken Casserole Recipe — A Modern Mrs.
I love trying new recipes! I really do, and now that I have the time again, I've been going through my favorite food blogs and Pinterest board digging up old {but haven't yet tried} recipes. When I was meal planning for my last grocery trip, I grabbed two recipes from The Girl Who Ate Everything; the Healthy Spinach Lasagna Rolls and today's recipe. While both were a hit with my family, my husband especially enjoyed the Bruschetta Pesto Chicken Casserole. Even L gobbled it up and requested I make it again! {Though she did pick out all of the tomatoes...}

Casseroles really are the gold mine of cooking. You throw everything into one pot or dish and bake. Sure, there's some prep involved, but this recipe is light, fresh, and great for summertime despite the use of the oven. I do hope you'll give it a try!

Bruschetta Pesto Chicken Casserole Recipe

{Adapted from The Girl Who Ate Everything}

  • 1 pint Grape Tomatoes, quartered
  • 1 Garlic Clove, minced
  • 2 tbs. Balsamic Vinegar
  • 4 Boneless, Skinless Chicken Breasts {about two pounds}, cubed
  • 1/2 cup Basil Pesto
  • 2 cups Shredded Mozzarella Cheese
  • 1/4 cup Butter, melted
  • 2 cups Seasoned Panko Crumbs
  1. Preheat your oven to 375 degrees.
  2. In a small bowl, combine the tomatoes, garlic, and vinegar. Marinate in the fridge until ready to use.
  3. In a medium bowl, toss the pesto and chicken together. Place in a single layer in a 13x9 baking dish.
  4. Scoop the tomato mixture on top, disregarding any excess balsamic vinegar leftover.
  5. Sprinkle the cheese on top.
  6. Mix the melted butter and panko crumbs together and sprinkle on top of the cheese.
  7. Bake for 25-30 minutes, or until the chicken is done. If you notice the crumbs are browning too much, cover your dish with a foil tent.
Note: You can make your own pesto if you prefer, but I purchased mine from my grocery store. If you're looking to buy ready-made pesto, you will find it either by the condiments, down the pasta aisle, or near the refrigerated pasta. {My store had it down the pasta aisle.}
