With warm weather comes barbeques, potluck dinners, and regular household dinners where mom is looking for any dish that doesn't require the use of her oven. Enter wonderful cool, delicious, homemade macaroni salad! Last week I made pulled pork in the slow cooker, and I was looking for an easy, new side dish. I don't know what it was, but macaroni salad came to mind, and I realized I had never made homemade macaroni salad before, so the challenge was on. I went on a search for a recipe that contained some nutritional value, and came across a Classic Macaroni Salad Recipe that utilizes not only fresh celery, but grated carrot, too! Win!

Now, the original recipe is for 10 servings, which I halved, and I still had so much macaroni salad leftover. We were able to use the leftovers with our BLT lunch the next day {which you can see here}, hamburger dinner the next night, and random snackings since. In fact, I just polished off the last of it yesterday.... almost a week after I first made it! This recipe is sure to please, and since it makes so much, don't skimp on the seconds.

Macaroni Salad Recipe

{Adapted from Allrecipes}

  • 2 cups Uncooked Elbow Macaroni
  • 1/2 cup Mayonnaise
  • 2 tbs. Distilled White Vinegar
  • 1/3 cup White Sugar
  • 1 tbs. and 3/4 tsp. Yellow Mustard
  • 3/4 tsp. Salt
  • 1/4 tsp. Black Pepper
  • 1 Stalk Celery, Chopped
  • 2 tbs. Grated Carrot
  1. Bring a medium-sized pot of lightly salted water to a boil.
  2. Add the uncooked macaroni and cook until tender, about 8 minutes.
  3. Drain and rinse under cold water.
  4. In a large mixing bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt, and pepper.
  5. Stir in the celery, carrot, and macaroni.
  6. Refrigerate for at least 4 hours before serving, but preferably overnight.
  7. Enjoy for days.
