Burgers. They're one of the ultimate American comfort foods, and they're so very versatile. Make them with ground beef, ground turkey or chicken {as you see here}, but don't be fooled by their stigma — they can be healthy! In fact, this entire meal is healthy thanks to the side of Sweet Potato Fries.
Last week was our first full week of Paleo meals, so we aren't getting too creative just yet. I had some ground chicken and sweet potatoes, but didn't know exactly what to do with them, so I figured {given my lack of time} I'd whip up some burgers and fries. I knew we needed a veggie, so I figured I'd saute some portobello mushrooms and place atop the burgers. Well, I suck at sauteing {apparently}, so they didn't quite turn out how I envisioned, but were tasty nonetheless. Next time I'll use some romaine as a bun, since that's my new favorite thing to do!
Paleo Chicken Burgers with Sweet Potato Fries Recipe

- 1 lb. Ground Chicken
- 1 tbs. Garlic Powder
- 1 tbs. Onion Powder
- 1 tbs. Italian Seasoning
- 1 tsp. Paprika
- 1/2 tsp. Cayenne Pepper
- Pinch of Sea Salt and Pepper
- 1-2 Sweet Potatoes {depending on their size}, thinly sliced
- 2-3 tbs. Avocado Oil {I didn't have any, so I used Extra Virgin Olive Oil, but they weren't as crispy as they would've been otherwise.}
- Sea Salt to top fries, optional

- Preheat your oven to 400°.
- Keeping the skin on, slice your sweet potato(es).
- Place the sliced sweet potato(es) into a bowl, then add your oil and salt. Stir to completely coat all of the slices.
- Line a cookie sheet and arrange your slices evenly — Do not overlap.
- Bake for 25-30 minutes, or until you reach your desired crispiness.
- Add your ground chicken and seasonings to a large bowl.
- Using your hands, mix until well combined.
- Divide into four equal portions and create a burger patty.
- Add to grill or skillet and cook for 8-10 per side, or until the centers are no longer pink.

ReplyDeleteThe texture reminds me of breakfast sausage. In fact, I'll probably make some smaller versions of this and use them for just that!
