Who doesn't love bacon? SIT DOWN, YOU! I kid. I know you love bacon. I do, too, so when I was browsing Paleo-friendly recipes a few days ago, I was excited to see so many featuring bacon in some way. The Bacon Meatballs you see above were one of those recipes. They were super easy to make, incredibly scrumptious {moist and savory with a bit of crunch}, and my photos do them absolutely no justice.
I admit, though, I had no clue what to pair with them. Fellow Paleos, suggestions? I'll take note for the next time I whip these up!
Paleo Bacon Meatballs Recipe

- 1.5 lbs. Ground Beef
- 6 slices Bacon, Cut into 1 in. pieces
- 1/2 Yellow Onion, Diced
- 1 Egg, Whisked
- 1/4 cup Almond Flour
- 1 tsp. Cumin
- 1/2 tsp. Chili Powder
- Salt and Pepper, to taste

- Preheat your oven to 350°.
- Put a large skillet over medium heat and add your diced bacon.
- Once your bacon has rendered some fat, add your onions. Mix together and poke at it randomly to ensure the bacon and onions don't burn.
- Once the bacon has cooked through, transfer to a plate with a paper towel to drain and cool.
- Add your ground beef to a large bowl.
- Add your cooked bacon and onions, along with the egg, almond flour and seasonings.
- Using your hands, mix thoroughly.
- Roll into little {or big - your preference} balls and place on a lined baking sheet.
- Bake for around 10-15 minutes, or until the center is cooked through.
