Shrimp Scampi Recipe — a Modern Mrs.
I love seafood, and I love pasta, so replicating the shrimp scampi recipe I found on Picky Palate was a no-brainer! As if that wasn't enough, shrimp just happened to be on sale the day I was grocery shopping (which was the night this meal was planned for), and my local Giant store will steam your seafood for free, thus making this meal even quicker to prepare!

Now, if you're meal planning and shrimp isn't planned for the same day you're grocery shopping, don't worry! Shrimp will keep in the refrigerator for up to three days.

Shrimp Scampi Recipe

For the Shrimp:

  • 5 tbs. butter
  • 2 tbs. extra virgin olive oil
  • ½ cup white onion, chopped finely
  • 4 cloves garlic
  • 24 medium cooked shrimp, cleaned and shells removed
  • 2 pinches salt
  • ¼ tsp. fresh pepper
  • 2 tbs. lemon juice
  • ½ cup chicken broth or white wine

For the Pasta:

  • 1 lb. dry linguine noodles
  • 2 tbs. Earth Balance Soy-Free Buttery Spread
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh chives, chopped

For the Shrimp:

  1. Place the butter and olive oil into a large skillet (or pot), and heat over medium heat.
  2. Once melted, saute the onion for 3-5 minutes until softened.
  3. Stir in the garlic for 60 seconds, then stir in the shrimp.
  4. Season with salt and pepper and cook 4-6 minutes, or until pink and firm.
  5. Stir in lemon juice and chicken broth/white wine.
  6. Reduce heat to low and set aside.

For the Pasta:

  1. Cook pasta according to the packaging directions.
  2. Drain, then stir in the shrimp.
  3. Stir in the 2 tbs. butter, parsley and chives.
  4. Serve and enjoy!
